Zuppa di barbabietole
Ho sempre avuto un rapporto conflittuale con la barbabietola e
ci son voluti anni per decidermi ad avvicinarmi a questo tubero,
perchè la prima volta non si scorda mai, o meglio,
la prima volta ti segna (a vita)
specialmente se è stata traumatica!
Il sapore terroso, mi dispiace, non fa per il mio palato.
Ma se mi avessero spiegato che ero stata semplicemente sfortunella,
che non tutte le barbabietole sono uguali, che la maggior parte sono dolci, magari…
non avrei impiegato tutti questi ages per scoprire che mi piace assai.
Così, però è andata…
e così, giunge dunque l’ora di recuperare il tempo perduto.
Sicchè, la sperimentazione con questo affascinante ortaggio
dal particolare colore rosso violaceo continua imperterrita
e dal “pesto di barbabietola alla nocciola” (la ricetta la trovate qui),
oggi, passiamo a qualcosa di più vellutato,
una “zuppa di barbabietole” con porri, patate e timo,
da abbinare all’ultimissima novità che Casa Cameo ha voluto farmi scoprire,
sorprendendomi con un carico di piccoli barattolini blu di cremosissima creme fraiche Cameo
tutta da mangiare a grandi cucchiaiate!
La ricetta è davvero semplice, veloce e buona!
Si adatta a ogni stagione dell’anno e con i suoi colori rallegra la tavola,
allietando gustosamente il palato. 😉

I always had a contentious relationship with the beetroot and it took years to decide to approach this tuber, because the first time is unforgettable, or rather, the first time marks you (to life), especially if it was traumatic!
The earthy flavor, sorry, it’s not for my palate. But if I had explained that I had been simply unlucky, that not all the beets are equal, that most of them are sweet, maybe…I would not have spent all these ages to discover that I like it very much.
So, however, this is how it gone…and so, now is the time to make up for lost time.
Thus, the experimentation with this fascinating vegetable of particular purplish red continues unabated and the “beet hazelnut pesto” (you find the recipe here), now, let’s move on to something more velvety, a “beet soup” with leeks, potatoes and thyme, to be matched to the latest news that House Cameo wanted me to discover, surprising me with a load of small jars of blue cremy creme fraiche all to eat in large spoonfuls!
The recipe is very simple, quick and good! It adapts to every season with its colors and welcomes the table, wowing deliciously the palate.
Ingredients
600 gr of cooked beets steamed
2 potatoes
500 ml of water
Leek (a piece of about 10 cm)
1 jar of creme fraiche Cameo
Thyme
Olive Oil
Salt
Doses for 4 people
Cooking time: about 10-15 minutes
Pour into a pot a little oil, sliced thin the leek, brown it for a few seconds, then add a few tablespoons of water and stew it on low heat. Meanwhile, washed, peeled and cut into chunks the potatoes and beets.
When the leeks will be softened add the potatoes, beets, leaves of two or three sprigs of thyme and water.
Bring to a boil the soup, then add salt and close the lid. Reduce heat and simmer for about 10-15 minutes or until the potato will be softened.
Puree the soup with a hand blender, season with salt and possibly add more water if it becomes too thick.
Serve with plenty of creme fraiche to taste, and bon appétit.

Ingredienti
- 600 gr di barbabietola cotta al vapore
- 2 patate
- 500 ml di acqua
- 1 vasetto di creme fraiche
- q.b. timo
- q.b. olio evo
- q.b. sale
Procedimento
- Versate in una pentola un filo di olio, tagliate a rondelle sottili il porro, fatelo rosolare per pochi secondi, poi, aggiungete qualche cucchiaio di acqua e stufatelo a fiamma dolce.
- Nel frattempo, lavate, sbucciate e tagliate a tocchetti le patate e le barbabietole.
- Quando il porro si sarà ammorbidito aggiungete le patate, le barbabietole, le foglie di due o tre rametti di timo e l'acqua. Portate a bollore la zuppa, poi salate e chiudete con il coperchio. Abbassate la fiamma e lasciate cuocere per circa 10-15 minuti o fino a quando la patata non si sarà ammorbidita.
- Frullate la zuppa con un frullatore a immersione, regolate di sale ed eventualmente aggiungete altra acqua se dovesse risultare troppo densa.
- Servite con abbondante creme fraiche a piacere e bon appétit.

Non dimagrante, ma semplicemente detox (cosa che in questo periodo necessito assolutissimamente) 😉

ho un rapporto strano anch’io conle barbabietole, non so quante me ne fatte mangiare mamma semplicemente in insalata…..per un periodo non le volevo neanche vedere! poi le ho riscoperte in un risotto e le sto rivalutando! poi se me le presenti così, con quella meravigliosa crème fraiche …..

La mia prima volta è stata talmente traumatica che poi quando mio marito le comprava gli dicevo sempre “son tutte tue”!
Poi, per fortuna ho cambiato idea scoprendo un alimento davvero buono!
